Cheesy Guacamole

Ingredients

  • 3 avocado ripe
  • lime juice of 1
  • 1/4 cup cilantro chopped
  • 1/4 cup red onion diced
  • 1/3 cup cheddar cheese shredded, or Mexican blend cheese
  • 1/4 cup queso fresco crumbled
  • 1 tablespoon jalapeño minced
  • salt to taste, kosher salt and freshly cracked
  • black pepper to taste, kosher salt and freshly cracked
  • tortilla chips for serving, brand Garden of Eatin' Bowls

Instructions

  1. Cut the avocados in half lengthwise. Remove the seed. Scoop out the flesh with a spoon and put into a medium bowl.
  2. Add the lime juice, cilantro, red onion, shredded cheese, crumbled queso fresco, and  jalapeño. Season with salt and black pepper, to taste. Using a fork, roughly mash the avocado until you've reached desired consistency. Taste and add more salt and pepper if necessary.
  3. Serve immediately with tortilla chips.
  4. Note-most grocery stores carry queso fresco. If you can't find it cotija cheese will work too!
