Ingredients

  • 1 large egg
  • 1 cup milk whole
  • 1/3 cup vegetable oil
  • 2 tablespoons sugar
  • 2 cups flour
  • 1 cup whole wheat flour
  • 1 tablespoon baking powder
  • 2 teaspoons thyme dried
  • 1 teaspoon oregano dried
  • 1/2 teaspoon garlic powder , (optional)
  • 1/2 teaspoon salt
  • 1 cup mozzarella cheese cut into 1/2 inch chunks (not fresh

  1. Preheat oven to 350 degrees and line a 12-cup muffin tin with muffin liners or spray with baking spray.
  2. In a large bowl whisk together the egg, milk, oil, and sugar.
  3. Sift together the flour, whole wheat flour, baking powder, thyme, oregano, garlic powder, and salt.
  4. Add to the wet ingredients and whisk until just combined.
  5. Stir in the mozzarella chunks.
  6. Scoop into muffin cups and bake for 18-20 minutes until a toothpick comes out clean.
