Ingredients

  • 1 small onion
  • 2 garlic cloves
  • 2 teaspoon butter
  • 1 teaspoon olive oil
  • 1 teaspoon dried thyme
  • ½ teaspoon dried parsley
  • 1 lb waxy potatoes
  • salt and pepper
  • ¾ cup vegetable stock
  • ½ cup heavy cream
  • 1 cup strong cheese - grated (see notes)
  • ¼ cup blue cheese - crumbled (optional)

Instructions

    Cup of Yum
  1. Pre-heat the oven to 220ºC.
  2. Finely chop the onion and garlic.
  3. Heat a large oven proof frying pan/sauté pan over medium heat.
  4. Add the butter and oil and allow to melt.
  5. Once melted, add the onion and cook for 3 minutes before adding the garlic.
  6. Add in the thyme and parsley and stir well.
  7. Season with salt and pepper and then in the chicken stock and cream.
  8. Stir well and bring to a simmer.
  9. Whilst that is heating up use a mandoline or a food processor to slice the potatoes into thin rounds (I have my mandoline set at 6mm)
  10. Add the potato slices to the frying pan. Cover with a lid (or foil) and cook over a low heat for 15 minutes.
  11. Grate the strong cheese.
  12. Remove the lid, crumble over the blue cheese, then cover with the strong cheese.
  13. Place the frying pan into the oven and cook for 15 minutes until the cheese is melted and bubbling.
  14. Let the dish sit for 5 minutes before serving (trust me)

Notes

  • I use a mixture of colby and tasty. But a good cheddar would be great.
