Cheesy Mashed Potatoes

Ingredients

  • 4 lb (2kg) large potatoes
  • ¾-1 cup milk warmed (alternatively use heavy cream)
  • 4 tbsp butter cubed
  • 2 cups shredded cheddar cheese
  • salt and black pepper to taste

Instructions

  1. Place the potatoes in a large pot then fill with water and add a generous pinch of salt.
  2. Place over medium-high heat then cover with a lid and bring to a boil.
  3. Allow the potatoes to cook for 30-45 minutes or until fork tender.
  4. Strain the potatoes then carefully peel off the skins.
  5. Place the cooked potatoes back in the pot then add the warmed milk and cubed butter.
  6. Add the cheese then mash with a potato masher or hand mixer.
  7. Season with salt and pepper to taste then serve.
