Cheesy Oven Baked Western
This Cheesy Oven Baked Western is a favorite for breakfast or even dinner! Full of ham, onions, peppers, cheese and surrounded by egg! Total perfection!

Ingredients
- 6 large eggs
- ¼ cup heavy cream (35 %)
- ¼ cup milk (2 %)
- 2 tblsp sour cream
- ½ cup medium onion, diced
- 2 tblsp butter
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon mustard, ground
- 1 ¼ cup ham, leftover, cooked and cubed - divided
- 2 cups cheese, shredded, (to taste), divided
- 2 green onion, thinly sliced
- 1 medium pepper, any color, diced (optional)
Instructions
- Preheat the oven to 350 degrees. Prepare an oven safe dish with butter or cooking spray. Set aside.
- In a small skillet, on medium heat, melt the butter and saute the onion until softened.
- In a medium sized bowl whisk together the eggs, milk and/or cream, sour cream salt, pepper and ground mustard.
- Pour ½ of the egg mixture into your prepared dish. Sprinkle evenly with the sautéed onions, peppers (if using) and 1 cup of the diced ham. Top with 1 cup of shredded cheese. Pour the remaining egg mixture on top.
- Bake for 55 minutes then sprinkle with the remaining 1 cup of shredded cheese, ¼ cup of ham and chopped green onions. Continue to bake for another 5-10 minutes until the center is set when gently shaken or a toothpick comes out clean. Broil until the cheese is nicely browned. Allow to rest for 5 minutes then serve.
