Cheesy Potato Soup

Cheesy Potato Soup combines thawed hash browns with creamy soups, half-and-half, and melted cheddar cheese to create a rich and comforting meal. The slow cooker method allows the flavors to meld gently over several hours, resulting in a smooth, velvety texture enhanced by optional mix-ins like creamed corn or ham. Toppings such as sour cream, bacon crumbles, and chives add layers of flavor and texture for serving.

  3. Sprinkle with the remaining ½ cup cheese along with any other desired toppings before serving.

Notes

  • For stovetop preparation, cook ingredients in a pot over medium heat, simmering until potatoes are tender, about 30–40 minutes.
  • Store leftover soup in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently on the stove or in the microwave; add more half-and-half as needed to restore smooth consistency.
