Cheesy Quinoa Porridge with Grana Padano and Prosciutto di San Daniele {Gluten Free}

Ingredients

  • 1 tbsp olive oil
  • 1 garlic clove minced
  • 2 spring onions (scallions) finely sliced
  • 180 g quinoa rinsed
  • 10 cherry tomatoes halved
  • 1 small cheese rind I used Grana Padano
  • 475 ml chicken stock
  • 50 g shredded Grana Padano
  • handful of chopped parsley
  • 4 slices of Prosciutto di San Daniele torn into bits

Instructions

    Cup of Yum
  1. Heat the olive oil in a pot over medium heat.
  2. Add the spring onions and garlic and cook, for 1 minute.
  3. The add in the quinoa, tomatoes, cheese rind and chicken stock, stir well and cover.
  4. Bring to the boil, reduce to a simmer, cover and let cook for 15 mins.
  5. Switch off the heat and stir in the grated cheese and parsley.
  6. Top with the torn ham and serve.
