Cheesy Scrambled Eggs

These spicy cheesy scrambled eggs recipe is my go-to when I want something delicious for breakfast in a flash.

Ingredients

  • 6 eggs
  • ¼ cup cream
  • 2 tsp salt
  • ½ tsp pepper
  • 1 tbsp butter
  • 1 red chilli finely chopped
  • ½ cup feta cheese crumbled

Instructions

  1. Crack the eggs into a medium bowl then add the cream.
  2. Season with salt and black pepper and whisk until the yolks and egg whites are completely homogenous.
  3. Heat a large skillet or pan over medium heat.
  4. Add a knob of butter or tablespoon of olive oil then add the chillies and cook for a minute.
  5. Pour in the eggs and cook for a minute then add the crumbled feta cheese.
  6. Stir with a rubber spatula to combine and cook until the eggs have formed curds but are still quite wet.
  7. The residual heat in the pan will continue cooking the eggs fully.
  8. Stir the eggs until cooked to your preference then serve over toast with and garnish with chives.
