Ingredients

crust and topping
  • 3 cups all-purpose flour
  • 1 cups sugar
  • ½ teaspoon salt
  • ¾ cup unsalted butter melted
cherry cheesecake
  • 8 ounces cream cheese, softened
  • 1 cup sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 21 ounce can cherry pie filling

Instructions

    Cup of Yum
  1. Preheat the oven to 350 degrees F. Spray a 9x13 inch baking dish with nonstick spray.
  2. Stir the flour, sugar and salt together in a large bowl. Add the melted butter and stir until a shortbread-like dough comes together. I even use my hands to bring it together. Press half of the dough into the bottom of the dish. Keep the rest for the topping.
  3. In a bowl of your electric mixer (or with a hand mixer), beat together the cream cheese, sugar, egg and vanilla extract until creamy and smooth. Pour the mixture over the crust.
  4. Pour the cherry pie filling over the cream cheese layer and gently press it out towards the edges.
  5. Crumble the rest of the dough over top of the cherry mixture. Bake for 55 to 60 minutes, until the bars are set and no longer jiggly. Cool completely before slicing into squares!
