Cherry Chocolate Almond Energy Balls
Fun, nutrient packed, delicious energy balls studded with sweet dried cherries and flecks of decadent dark chocolate!

Ingredients
- 1 cup rolled oats
- 1/3 cup chia seeds
- 1/3 cup unsweetened shredded coconut
- 1/2 cup almond butter
- 1/4 cup ground flax seed
- 1/2 cup dried cherries
- 1/3 cup honey
- 1 tsp vanilla extract or vanilla paste
- 1/3 cup finely chopped dark chocolate
Instructions
- Combine all ingredients in mixing bowl and stir together until combined.
- Cover with plastic wrap and place in refrigerator for 30 minutes – 1 hour.
- Use a small cookie scoop (tablespoon size) to scoop the mixture into a rough ball shape, then use hands to form into round balls.
- Store energy balls in an airtight container in the refrigerator, or freeze.
