Ingredients
- ½ cup butter softened, unsalted
- ¾ cup light brown sugar packed
- 1 large legg
- 1 tsp vanilla extract pure
- ¼ tsp almond extract pure
- 2 drops pink gel food
- 1 ½ cup all-purpose flour
- ½ tsp baking soda
- ¼ tsp kosher salt
- ¾ cup maraschino cherries chopped, drained and dried
- ¾ cup semi sweet chocolate chips
Instructions
- Preheat oven to 350 degrees and line two cookie sheets with parchment paper
- Using a standing mixer, cream together the butter and brown sugar until combined and smooth.
- Beat in the eggs, vanilla and almond extract until combined.
- Mix in the pink gel food coloring.
- In a medium bowl, combine the dry ingredients.
- Gradually mix in the dry ingredients into the wet ingredients until combined.
- Gently fold in the cherries and the chocolate chips.
- Use an ice cream scoop and scoop batter onto the cookie sheet.
- Bake in the oven for 14-16 minutes or until lightly golden brown.
- Allow to cool completely.
