Ingredients

  • 4 cups cherries pitted (fresh or frozen)
  • 1 cup granulated sugar divided
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter melted
  • 1 cup milk

  1. Preheat oven to 375°F. In a mixing bowl, combine cherries, 1/2 cup sugar, lemon juice, and vanilla extract. Spread the cherry mixture into a greased 9-inch square baking dish.
  2. In a separate bowl, whisk together flour, the remaining 1/2 cup sugar, baking powder, and salt. Stir in melted butter and milk until just combined.
  3. Pour the batter evenly over the cherry mixture in the baking dish. Do not stir.
  4. Bake for 45 minutes or until the top is golden brown and a toothpick inserted into the biscuit topping comes out clean.
  5. Allow the cobbler to cool slightly before serving. Serve warm with vanilla ice cream, if desired.
