Cherry Compote

Homemade cherry topping for desserts or a tasty addition to yogurt or oatmeal. You'll be tempted to eat this cherry compote by the spoonful!

Ingredients

  • 1 pound bing cherries cleaned and pitted
  • 2 Tablespoons granulated sweetener like monk fruit
  • 2 tablespoons water
  • 1/2 teaspoon almond extract

Instructions

  1. Wash cherries, remove stems and pits.
  2. Place prepared cherries in a saucepan.
  3. Add sweetener and water. Simmer over low heat.
  4. Continue to stir until the fruit begins to produce natural fruit juice as well as soften. This will take up to 20 minutes.
  5. Remove from heat and add almond extract.
  6. Cool before placing in a container with a cover.
  7. Enjoy warm or cold.

Notes

  • Sweetener is optional. You may not need any depending on the sweetness of the cherries used.
