Ingredients

  • 1 package frozen puff pastry two sheets, thawed
  • 8 ounces cream cheese softened
  • 2 tablespoons butter softened
  • 2 eggs divided
  • ¼ cup sugar
  • 1 teaspoon vanilla extract
  • 1 can cherry pie filling

Instructions

    Cup of Yum
  1. Preheat the oven to 400 degrees F. Lightly flour a clean work surface.
  2. Open the puff pastry sheet and roll it out until it's around ¼ inch thick. Cut each sheet into 12 rectangles.
  3. Press the rectangles into muffin pans to form a cup shape.
  4. Lightly beat one of the eggs and coat each puff pastry cup with a pastry brush.
  5. In a medium bowl, beat the cream cheese, butter, remaining egg, sugar, and vanilla with an electric mixer until well combined.
  6. Add one tablespoon of the cream cheese mixture to each pastry cup.
  7. Place in the oven to bake for 12 to 15 minutes, until the edges of the pastry are golden brown.
  8. Allow the pastry to cool to room temperature, then transfer to the refrigerator to chill for at least one hour.
  9. When ready to serve, top each Danish with a tablespoon of cherry pie filling.

Notes

  • You have to plan ahead for this recipe! The puff pastry must thaw, and the butter and cream cheese must be softened to room temperature.
  • When rolling out puff pastry, a little flour goes a long way to prevent sticking. But be careful not to overdo it – too much flour can make the pastry tough.
  • If you're feeling ambitious, you can use homemade puff pastry instead. Just be aware that it's a labor of love, so make sure you have extra time to spare.
  • Feel free to swap out the cherry pie filling for any fruit filling you love. Blueberry, apple, or raspberry all make delicious alternatives.
