Cherry Dumpling Casserole

Ingredients

  • 2 cups fresh cherries pitted and sliced (you can probably use frozen and thawed)
  • 2 cans refrigerated croissant dough
  • 3/4 cup butter
  • 1 1/4 cup sugar
  • 2 teaspoons almond extract
  • 8 ounces lemon-lime soda
  • 1/2 teaspoon ground nutmeg
  • 2 tablespoons sliced almonds
  • cooking spray
  • vanilla bean ice cream

Instructions

  1. Preheat oven to 350 degrees.
  2. Coat cooking spray on 9x13 pan.
  3. Estimate 2-3 cherries per refrigerator croissant roll, roll up like you were making the actual rolls. Line them up 8 on each side.
  4. In a small sauce pan, melt butter, add almond extract and then sugar, stirring until all wet, but still grainy.
  5. Pour evenly over cherry dumplings.
  6. Pour lemon-lime soda around cherry dumplings. Sprinkle with nutmeg and sliced almonds.
  7. Bake for 40 minutes. Remove and allow to cool for 10 minutes before serving with a large scoop of vanilla ice cream.
