Cherry Fluff Salad

Ingredients

  • 1 cup sweetened condensed milk
  • 2 tablespoons lemon juice fresh
  • 28 ounces cherry pie filling 1 can
  • 16 ounces pineapple drained, 2 cans, crushed
  • 1 cup miniature marshmallows
  • 8 ounces whipped topping such as cool whip
  • ⅔ cup pecans chopped

Instructions

  1. In a large bowl, stir together sweetened condensed milk and lemon juice until fully combined.
  2. Add in the cherry pie filling.
  3. Fold the crushed pineapple, mini marshmallows, cool whip, and pecans into the cherry mixture until fully incorporated.
  4. If freezing, spread the cherry salad into a 9x13 inch baking pan lined with parchment paper. If you'd like to eat this as a soft fluff, refrigerate at least 4 hours. Top with additional nuts for garnish if desired.
  5. Freeze for at least 5 to 6 hours or until firm.
  6. Once frozen, use the edges of the parchment to lift the salad out of the pan, then use a sharp knife to slice into squares.

Notes

  • This salad can be served as a soft fluff after refrigerating at least 4 hours or frozen into a firm dessert for slicing.
  • Allow frozen salad to soften about 15 minutes at room temperature if frozen longer than 6 hours for easier slicing.
  • Optional toppings include whipped cream and maraschino cherries to complement the flavors.
