Cherry Mojito Recipe

Light cherry lime mojito with rum and a homemade sugar free cherry syrup. Top with club soda for a refreshing cocktail.

Ingredients

Cherry Syrup
  • 1 cup fresh cherries pitted
  • ½ cup water
  • 6-9 drops of liquid stevia or 2 teaspoons of granulated sugar
Cocktail (1 Serving)
  • 1-2 tablespoon Cherry Syrup
  • 10-12 mint leaves
  • 2- ounce rum white
  • ½ tablespoon fresh lime juice
  • 6- ounce club soda or sparkling water
  • Fresh cherries and mint for garnish

Instructions

  1. Cherry Syrup
  2. Wash cherries, pit and remove stems.
  3. In a small saucepan add cherries and water and cook over medium high heat.
  4. Bring ingredients to a boil.
  5. Once syrup reaches a boil lower the heat to simmer. Simmer for 10 minutes stirring constantly.
  6. Remove from heat and add sweetener.
  7. Cool at room temperature before using.
  8. Cherry Mojito (1 Serving)
  9. In a tall 8-ounce glass place clean mint leaves at the bottomof the glass and muddle releasing the oils.
  10. Add 1-2 tablespoon of cherry syrup and fill 2/3rds of the glasswith ice.  
  11. Add rum, lime juice and fill the rest of the glass with club soda. Stir with a cocktail swizzle stick. Garnish with fresh cherries, lime, and mint.

Notes

  • Frozen cherries can be used in place of fresh. You will need to simmer the syrup longer. Also be sure you pick frozen cherries without added sugar.
  • Cherry syrup can be strained to remove the solids before using if preferred.
  • Sugar Free Option - Use 2 teaspoons of Truvia granulated sweetener instead of the drops or 2 tablespoons of your favorite alternative sweetener.
