Ingredients

Cheesecake
  • 1 cup Greek yogurt Dannon Light and Fit vanilla flavor
  • 1/2 cup cream cheese 1/3 less fat
  • 1/2 cup Greek yogurt plain, non-fat
  • 1 coop casein protein powder Cellucor Vanilla flavor
  • 1 tsp vanilla extract
Cherry Topping
  • 1 cup Cherry pitted and halved
  • 1 tbsp honey
  • 1/4 tsp arrowroot flour
Crust
  • 2 graham crackers fat free
  • 2 tsp ghee or butter, melted
  • 1/8 tsp cinnamon

Instructions

    Cup of Yum
  1. Add cherries and honey to a small pot and bring to a boil over medium heat.  Lower heat to a simmer for another 10-15 minutes until cherries can be mashed.  Whisk in arrowroot flour, bring to a boil, then remove from heat.
  2. Crush graham crackers, then mix in melted ghee and cinnamon.  Add to bottom of 4 serving cups.
  3. Blend all cheesecake ingredients using a hand blender until smooth.  Spoon or pipe on top of graham cracker crust.
  4. Top with cherries before serving.
