Ingredients
- 12 oz cherry tomato ripe, or grape tomatoes
- 2 TBSP extra virgin olive oil quality
- 1 TBSP red wine vinegar
- ½ cup green onion adjust as desired, chopped
- ¼ cup onion red, chopped
- ⅛ tsp sea salt or to taste
- ⅛ tsp black pepper
- 2 TBSP parsley fresh chopped

- 1 cup cucumber chopped
- ⅓ cup feta cheese crumbled
- 1 avocado cubed, small
Instructions
- Grab your tomatoes and get chopping! Cut into halves or quarters.
- Toss tomatoes with olive oil, vinegar, green onion, and red onion.
- If you're adding the optional (and DELICIOUS!) cucumber or avocado and crumbled feta add it here.
- Season with salt and pepper, then give it a taste. Adjust ingredients if desired (I love adding extra onion and feta)
- Mix in some fresh parsley to garnish and dig in!
Notes
- This salad complements grilled chicken and is delicious stuffed into pita with falafel and tzatziki.
- It also works well served on baked sweet potatoes or mixed into pasta salad.
