Ingredients
- 1 ¼ c unbleached all-purpose flour
- 1 c whole wheat flour
- 1 ½ tsp baking soda
- 2 tsp ground ginger
- ½ tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp ground cloves
- ¼ tsp salt
- ¼ c + 1 Tbsp canola oil
- ¼ c molasses
- 1 c white sugar
- 1 egg
- 3 Tbsp granulated sugar (for topping)
Instructions
- Preheat your oven to 350F.
- In a medium bowl mix together flours, baking soda, spices, and salt.
- In a large bowl, beat together oil, molasses and sugar until well blended. Add egg, and beat until incorporated.
- Add dry mixture to wet mixture, stirring until just moistened.
- Shape dough into 1.5” balls. Flatten and space 1” apart on a lined cookie sheet. Sprinkle with granulated sugar.
- Bake for 10 minutes, or until cookies are puffy and slightly firm around the edges.
- Remove from the oven and let the cookies cool on the pan for 2 minutes before removing to a wire rack to cool completely.
- Store in an air-tight container for up to a week.
