Ingredients
- 8 cups chicken broth
- 2 cups chicken , skinless and shredded
- 2 cups long grain wild rice , cooked
- 2 carrots , chopped
- 2 parsnips , chopped
- 4 celery stalks , chopped
- 1 teaspoon kosher salt
- 1 tablespoon lemon juice
- 1 tablespoon flat leaf parsley , chopped
- Parmesan Cheese , for topping
Instructions
- In a large pot or Dutch oven, heat chicken broth.
- Add chopped carrots and parsnips. Bring to a low simmer for 5 minutes. Add celery and simmer for 3 minutes longer.
- Finally, add chicken, long grain wild rice, Kosher salt, lemon juice and flat leaf parsley. Simmer for 5 more minutes.
- Serve with a topping of parmesan cheese.
