Chicken Artichoke Pasta

Ingredients

  • 4 tablespoons olive oil
  • 1/3 cup green onions chopped
  • 1 tablespoon garlic chopped
  • 1 pound boneless skinless chicken breast cut into bite size pieces
  • 1 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes
  • 1/3 cup water
  • 14 ounces artichoke hearts drained
  • 1 cup heavy cream
  • 1 1/2 teaspoons butter
  • 10-12 ounces penne pasta cooked
  • 3/4 cup fresh grated parmesan cheese

Instructions

  1. Heat olive oil, onions, and garlic in a large skillet. Add chicken, salt, and red pepper flakes. Cook until chicken is cooked through.
  2. Add water and scrape the bottom of the skillet. Add artichoke hearts and heavy cream.
  3. Let reduce (cook 7 minutes until half as thick).
  4. Remove from heat and stir in butter and parmesan cheese. Add pasta.
  5. Serve with green onions, red pepper flakes, and parmesan cheese.

Notes

  • Looking to mix it up? Try shrimp instead of chicken for a delicious alternative.
  • Or, for a vegetarian version, use mushrooms instead of chicken. 
  • You can use marinated artichokes for even more flavor!
