Chicken Artichoke Pasta

Ingredients
- 1 lb chicken breast sliced
- garlic salt and pepper to taste
- 1 tbsp olive oil
- 3-4 garlic cloves minced
- 10 oz Pasta of Choice
- 1 Boursin cheese
- 14 oz jar artichoke hearts drained and chopped
Instructions
- Cook the pasta according to the package directions. Once cooked to al dente, reserve 1 1/2 cups of the pasta water, then drain.
- Slice the chicken and season with garlic salt and pepper.
- Heat the oil in a large skillet and cook the chicken until golden brown and cooked through.
- Add the garlic and cook for 1 minute more.
- Add the pasta water and Boursin cheese. Stir until the sauce is creamy.
- Add the artichokes, and cooked pasta and combine with the sauce.

Notes
- Use any pasta of your choice. Some healthier choices can be lentil or chickpea pasta
- Use lean chicken breast if possible. You may also use chicken thighs or swap them with other proteins of your choice like shrimp.
- instead of Boursin cheese, use 8oz of lite cream cheese.
