Chicken, Asparagus, and Sweet Potato Skillet

This CHICKEN, ASPARAGUS, AND SWEET POTATO SKILLET is a super easy, yet very flavorful one-pot meal!

Ingredients

  • 1 lb. boneless skinless chicken breasts cut into 1/2 inch pieces
  • salt and pepper
  • 1 Tbsp. coconut oil
  • 3 garlic cloves minced
  • 1 medium sweet potato peeled and diced
  • ¾ cup chicken broth or water
  • ½ lb fresh asparagus cut into 1.5-inch pieces
  • ½ tsp. salt
  • ½ tsp. black pepper
  • ½ tsp. red chili flakes

Instructions

  1. Season the chicken with salt and pepper.
  2. In a skillet over medium heat, add the coconut oil.
  3. Once heated, add the garlic and chicken. Sauté for about 7-8 minutes or until it is cooked through. Be sure not to overcook! Set the chicken aside.
  4. In the same skillet, add the sweet potato and chicken broth.
  5. Cook for about 7-10 minutes or until the sweet potato is cooked through.
  6. Add the asparagus and cook for about 4-5 minutes.
  7. Add the chicken and season with salt, pepper, and red chili flakes.
  8. Serve hot.
