Ingredients

Chicken:
  • 1/2 lb. chicken breast boneless, skinless, and thinly sliced
  • 1 Tablespoon extra virgin olive oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon smoked paprika
  • 1/8 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon cumin ground
  • 1/8 teaspoon chili powder
  • 1/8 teaspoon oregano
  • 1/2 lime juiced
Cilantro Lime Juice Dressing:
  • 3 Tablespoon lime juice
  • 2 Tablespoon extra virgin olive oil
  • 1 Tablespoon cilantro chopped
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes crushed
Salad:
  • 1 English cucumber halved and sliced
  • 1 cup cherry tomato halved
  • 1/4 red onion thinly sliced, medium
  • 1 corn cooked, ear
  • 1 avocado diced

Instructions

Directions:
Chicken:
    Cup of Yum
  1. Heat a nonstick griddle pan over medium heat and coat with olive oil.
  2. In a mixing bowl, combine all seasonings and olive oil. Add the chicken and toss to coat.
  3. Add seasoned chicken breast and cook on each side for 3-4 minutes, flipping once in between. Remove from pan to a plate and allow to cool.
Cilantro Lime Juice Dressing:
  1. Mix together all ingredients for the dressing into a small mixing bowl and whisked until combined.
  2. Cut cooled chicken into small cubes and toss in a large bowl with salad ingredients. Drizzle dressing over the top and toss to coat evenly.
