Chicken Bacon Quesadilla with Peanut Sauce

Ingredients

Peanut Sauce
  • 1/2 cup water
  • 1/2 cup peanuts Planters brand, dry roasted
  • 2 1/2 Tablespoon rice vinegar
  • 1 1/2 Tablespoon soy sauce
  • 3 teaspoon sugar
Quesadillas
  • 4 chicken thighs
  • 8 lices Bacon brand Oscar Mayer Butcher Cut
  • 2 cup cheddar cheese brand Kraft Natural
  • 4 Tablespoon cilantro
  • 8 flour tortillas

Instructions

    Cup of Yum
  1. Cook the bacon and chicken thighs.
  2. To make the peanut sauce combine all the ingredients in a blender and mix well. If it is too thick add a tablespoon or so of extra water. Refrigerate sauce until ready to use.
  3. When you are ready to make the quesadillas heat a frying pan over medium high heat and spray with cooking spray.
  4. Chop the chicken and bacon into smaller pieces.
  5. Lay 4 tortillas out and top each with a chicken thigh, two pieces of bacon and 1/2 c. of cheese.
  6. Sprinkle cilantro on each and top with a second tortilla.
  7. Fry each quesadilla for 6 minutes, flipping once half way through.
  8. Serve with peanut sauce.
