Ingredients

Chicken
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon ranch seasoning mix
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 3 boneless skinless chicken breasts (cubed into bite sized pieces, or 2 cups leftover cooked/rotisserie chicken)
Pasta
  • 8 strips bacon (chopped)
  • 4 cups uncooked pasta (i.e. rotini, penne, fusilli)
  • 4 cups Alfredo sauce (store bought or homemade)
  • 1 cup cheddar cheese (shredded)
  • 3 tablespoon ranch seasoning mix
  • 2 tablespoon fresh parsley (chopped)
  • salt and pepper (to taste)

Instructions

    Cup of Yum
  1. Heat a large frying pan or skillet on low heat. Chop the bacon into bite sized pieces and sauté until cooked through. Cooking bacon low and slow results in the perfect texture and crunch.
  2. Remove the bacon from the pan and drain on a paper towel linked plate. Leave approximately 2 tablespoon of bacon drippings in the pan (or just enough to coat the bottom of the pan, or remove all drippings and add 2 tablespoon olive oil or vegetable oil to the pan).
  3. In a medium sized bowl season the chicken with the ranch seasoning mix, salt, pepper, onion powder and garlic powder. Mix until evenly combined.
  4. Increase the temperature of the frying pan to medium and sauté the chicken until golden brown, about 5-8 minutes.
  5. Reduce the heat to low and add in the alfredo sauce and ranch seasoning mix. Mix until fully combined.
  6. In a large pot of boiling water, cook pasta until al dente, according to package directions. Drain.
  7. Gradually add in the cheese to the sauce. Stir continuously until fully melted. The sauce will start to thicken.
  8. Add in the pasta and stir to combine.
  9. Stir in the bacon and chopped parsley.
  10. Garnish with chopped parsley, shredded cheese and more bacon, if desired. Enjoy!
