Chicken Bacon Ranch Pasta

Ingredients

  • 3 cups chicken broth
  • 2 tablespoons ranch dressing seasoning mix
  • 8 ounces cream cheese cut into 1 inch pieces, softened
  • 2 cups chicken shredded
  • 2 cups rotini pasta uncooked
  • 1½ cups cheddar cheese shredded
  • 6 lices Bacon cooked and crumbled

Instructions

  1. Whisk 3 cups chicken broth and 2 tablespoons ranch dressing mix in a large skillet over medium heat, until well blended.
  2. Add 8 ounces cream cheese and cook 1-2 minutes.
  3. Add 2 cups shredded chicken, 2 cups uncooked pasta, and 1 cup of your cheese, and bring to a boil. Cover and cook over medium heat for about 16-18 minutes. Stir occasionally.
  4. Once pasta is tender, top with 6 slices cooked and crumbled bacon and remaining cheese and serve warm. ENJOY!

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in the microwave.
  • To freeze, increase chicken broth to 4 cups and ranch seasoning to 2.5 tablespoons, and use 10 ounces of cream cheese for extra sauce.
  • Cook pasta to al dente (about 10 minutes) before freezing to maintain proper texture when reheated.
  • Thaw frozen portions fully before reheating slowly on the stovetop, covering and stirring occasionally until heated through.
  • Add bacon and cheese as a finishing touch after reheating for best texture and flavor.
