Ingredients

  • 1 romaine lettuce head, chopped
  • 2 cups chicken breasts chopped, grilled
  • 4 egg peeled and quartered, hard-boiled
  • 2 Roma tomatoes diced, small
  • 1 avocado diced, large
  • 4 lices Bacon cooked and crumbled
  • 1 cucumber sliced, small
  • 1/3 cup red onion finely diced
  • 1/2 cup blue cheese crumbled
  • salt optional, to taste
  • black pepper optional, to taste
  • ranch dressing for serving
  • green onion for garnish, sliced

Instructions

    Cup of Yum
  1. On a large platter, arrange the chopped lettuce. Top with rows of chicken, boiled eggs, tomatoes, avocado, bacon, cucumber and red onion.
  2. Sprinkle with blue cheese, optional salt, and freshly ground black pepper.
  3. Drizzle ranch dressing and sprinkle green onions over the salad before serving.
