Chicken Cordon Bleu Soup

Chicken Cordon Bleu Soup freezer meal recipe filled with all the flavors of traditional cordon bleu. Mmmmm!

Ingredients

  • 2 lb. chicken thigh skinless, boneless
  • 1 ham bone medium, or ham hock
  • 32 oz. chicken broth
  • 2 cups water
  • 1 1/2 cups ham diced
  • 1 onion about 1 cup (250 mL, large
  • 4 celery about 1/2 cup (125 mL, stalks
  • 4 cloves garlic about 2 Tbsp. (30 mL)
  • 1 lb. gnocchi
  • 1 cup heavy cream optional
  • 8 oz. swiss cheese finely grated, for topping

Instructions

  1. Dice chicken thighs into 1/2-inch (1 cm) cubes.
  2. Puree onion until smooth, dice celery, mince garlic.
MAKE IT NOW
  1. In a 5 quart (4.73 L) slow cooker combine cubed chicken, pureed onion, diced celery, minced garlic, ham hock, chicken broth, water, diced ham, and gnocchi. Cover and cook on LOW 7 to 8 hours/HIGH 3 to 4 hours. Add heavy cream, if desired. Top with Swiss cheese.
MAKE IT A FREEZER MEAL
  1. In a labeled 1-gallon (5L) freezer bag combine cubed chicken, pureed onion, diced celery, minced garlic, ham hock, chicken broth, water diced ham, and gnocchi. Remove as much air as possible, seal. Freeze.
THAW AND COOK
  1. Place bag in large bowl in the fridge to thaw for 24 hours. Pour into a 5 quart (4.73 L) slow cooker. Cook on LOW 7 to 8 hours/HIGH 3 to 4 hours. Add heavy cream, if desired. Top with swiss cheese.
