Chicken Dinner Ideas: Easy Baked Chicken Recipe

Ingredients

  • 2 lbs chicken thighs
  • 2 tablespoons soy sauce
  • 1/3 cup brown sugar
  • 2 tablespoons white vinegar
  • 1 tablespoon minced garlic 
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • Chopped parsley for garnish

Instructions

  1. Whisk together soy sauce, brown sugar, vinegar, garlic, olive oil, salt, and pepper in a large bowl.
  2. Add the chicken thighs to the bowl and mix until evenly coated.
  3. Cover the bowl with plastic wrap and marinate for 1 hour in the fridge.
  4. Preheat the oven to 400°F. Line a rimmed baking sheet with foil. Then add a wire rack.
  5. Remove chicken thighs from the marinade and place on the rack with the skin side up, shaking off excess marinade.
  6. Bake for 35-40 minutes or until the chicken reaches an internal temperature of 165°F.
  7. (Optional)Broil for 2 minutes to make the chicken extra crispy. Garnish with optional parsley. Serve and enjoy!
