Chicken Divan

Ingredients

  • 3 broccolis , cut into florets and steamed
  • 5 chicken breasts , deboned and skinned
  • 2 tablespoons extra-virgin olive oil
  • 4 tablespoons sherry wine
  • 4 tablespoons unsalted butter
  • 1 small onion , grated
  • 4 tablespoons all-purpose flour
  • 1½ cup chicken stock
  • ¾ cup milk
  • ½ cup sour cream
  • 4 oz. grated cheddar cheese
  • ½ teaspoon nutmeg
  • ½ teaspoon paprika
  • salt
  • black pepper , freshly ground
  • 3 oz. panko breadcrumbs , optional
  • 3 oz. freshly grated parmesan , optional optional
  • 3 tablespoons unsalted butter , melted (optional)

Instructions

  1. Preheat the convection oven to 350 F (180°C).
  2. Heat the olive oil in a large nonstick skillet over medium to high heat.
  3. Just before the oil reaches its smoke point, place the chicken breasts in the pan and sear for 4 to 5 minutes over medium heat on each side until nicely browned.
  4. Halfway through cooking the chicken, add the grated onion.
  5. Salt and pepper them then transfer them to a dish, let them cool a little and cut them into cubes or strips.
  6. Reduce the heat to low to medium and deglaze the pan with the sherry wine.
  7. Add the butter and melt it completely.
  8. Add the flour and smooth the mixture with a whisk, then cook the mixture for about a minute.
  9. While whisking, add the chicken broth in 4 batches, and stir well, then add the milk and sour cream and stir well.
  10. Bring the sauce to a boil, then add the nutmeg, paprika and three quarters of the grated cheddar. Mix well.
  11. In a baking dish or a large ovenproof cast iron dish, arrange the steamed broccoli on the bottom and place the chicken breasts on top of the broccoli.
  12. Pour the sauce over it.
  13. (Optional) Mix the panko breadcrumbs, the parmesan and the melted butter in a bowl and spread this mixture over the entire surface of the sauce and the chicken.
  14. Top all with remaining grated cheddar cheese.
  15. Cover the dish with aluminum foil or parchment paper loosely, put in the oven and cook for 25 minutes.
  16. Remove the paper, increase the oven temperature to 390 F (200°C) and bake
  17. for 10 more minutes.
  18. Remove the dish from the oven and let cool for a few minutes before serving.
  19. Serve with steamed rice or baked or steamed potatoes.
