Ingredients
- 4½ cups shredded chicken
- 1 (28-ounce) can Green enchilada sauce
- 1 cup sour cream
- 9-10 corn tortillas, cut into 1-2 inch squares
- 4 cups shredded Monterey jack cheese
- toppings: cilantro, avocados, tomatoes, optional
Instructions
- Preheat oven to 375°F.
- Grease a 9x13 casserole dish and layer half of the chicken, sour cream, tortilla cubes, sauce, and cheese. Repeat these layers once more and bake, covered, for 40 minutes.
- Uncover and bake for an additional 10 minutes. Let it rest for about 15 minutes before serving.
- Top with cilantro, avocados, and tomatoes.
