Chicken Fajita Tacos

Chicken Fajita Tacos are a delicious and easy meal go-to when food needs to hit the table quickly - a homemade fajita seasoning shines in this simple chicken fajita recipe, but packaged fajita mix works beautifully when time is short.

Ingredients

  • 2 tablespoons fajita seasoning or 1 fajita seasoning packet
  • 1.5 pounds chicken thighs
  • 1 green bell pepper
  • 1 medium-sized white onion
  • 2 tablespoons vegetable oil divided
  • flour tortillas

Instructions

  1. Cut up chicken thighs into smaller bite-sized pieces and add to a bowl. Add all of the fajita seasoning, stirring to thoroughly coat the chicken. Set aside and finish prepping.
  2. Slice up the bell pepper and onion, roughly aiming for around ¼ inch thick pieces.
  3. Heat a pan with 1 tablespoon oil over medium-high heat. Once the oil shimmers with heat, add in the fajita-seasoned chicken. Cook for 6-7 minutes, stirring occasionally.
  4. Remove the chicken from the pan and set aside.
  5. Add the remaining 1 tablespoon of oil to the pan. Once the oil shimmers with heat, add all the peppers and onions.
  6. Cook pepper and onion over medium-high heat for 4-5 minutes, stirring occasionally; you want to retain some crispness so there’s some snap when you take a bite. 
  7. Turn off the heat and add the cooked chicken back to the pan. Stir and serve piping hot with warm tortillas.

Notes

  • Heat tortillas in a frying pan over medium-high heat. When heating up, flip frequently to ensure the tortilla doesn’t burn. I like to cook them until I start seeing some browning in areas.
