Chicken Fajitas

Ingredients
- 1.5 lbs chicken breast
- 3 bell peppers green, yellow, red, sliced into 1/4-inch strips
- 1 large onion thinly sliced
- 2 tablespoons olive oil
- ½ lime
- fresh cilantro
Fajita Seasoning
- 2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp salt
- 1 tsp black pepper
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp cayenne pepper or less to taste
Instructions
- Season the chicken. Cut the chicken breasts in half horizontally and then in strips. Generously sprinkle the fajita seasoning on both sides of the chicken and use your fingers to press it in.
- Cook the chicken. Heat olive oil in a large skillet over medium heat. Sear the chicken breasts for about 5 minutes on each side. Then remove them from the pan and let them rest for a few minutes covered with foil.
- Saute the bell peppers and onion. Saute bell peppers and onion in the same skillet over medium heat for a few minutes until caramelized.
- Mix together. Add the chicken back into the skillet, squeeze fresh lime juice on top and stir everything together.
- Wrap it up. Serve immediately with tortillas and extra toppings.

Notes
- Cut the chicken into pieces of a similar thickness so that they cook through evenly.
- Make sure that the chicken is cooked through before removing it from the skillet.
- If you like you can add in other veggies like mushrooms or zucchini.
- Adjust the seasoning to suit your spice tolerance. Use as much or as little cayenne as you like.
