Chicken Fajitas

Ingredients

  • 1 1/2 pounds boneless, skinless chicken breast
  • 5 1/2 teaspoons fajita seasoning
  • 2 1/2 tablespoons neutral oil
  • 2 limes, juiced
  • 1 red bell pepper, seeded and thinly sliced
  • 1 yellow bell pepper, seeded and thinly sliced
  • 1/2 yellow onion, thinly sliced
  • 1 minced garlic clove
  • salt and pepper to taste

Instructions

  1. Sliced chicken breasts into 1/4" thick pieces, crosswise.
  2. Transfer chicken to a large bowl and top with fajita seasoning, 1/2 tablespoon oil and juice of 1 lime.
  3. Toss together until chicken is completely and evenly coated. Allow mixture to sit for 30 minutes
  4. Place a large sauté pan over medium-high heat. Add 1 tablespoon oil and chicken and sauté until chicken has just cooked through, 3 to 4 minutes. (Do this in batches to prevent chicken from steaming)
  5. Transfer chicken to a large plate and set aside.
  6. Place pan back over heat and add remaining oil. Add bell peppers and onions and sauté for 3 to 4 minutes or until vegetables char around the edges and begin to soften. Add garlic and continue to sauté for 1 minute.
  7. Add chicken back to pan, top with remaining lime juice, lightly season with salt and pepper and toss together.
  8. Remove mixture from heat and serve (with flour tortillas and whatever toppings you want!).

Notes

  • Prepping Chicken Fajitas Ahead of Time
  • Mix the fajita seasoning up to 6 months ahead of time and store in an airtight container in a cool and dry place.
  • Chop the onion and peppers up to 3 days ahead of time and store in an airtight container in the refrigerator.
  • Mince the garlic up to 3 days ahead of time and store in an airtight container in the refrigerator.
  • Slice and marinate the chicken up to 2 days ahead of time and store in an airtight container in the refrigerator.
