Chicken Fritters - Easy, Tasty, Keto

My easy chicken fritters are a healthy lunch or dinner that's ready in just 20 minutes. They are crispy on the outside, juicy on the inside and super tasty. The recipe is naturally low carb and gluten free. These keto chicken fritters taste great hot or cold!

Ingredients

  • 3 turnips 220g, 3 cups shredded
  • 2 cups shredded chicken 220g / 2 cooked chicken breasts
  • 2 eggs large
Seasonings
  • 2 teaspoon olive oil + more to fry
  • 2 tablespoon nutritional yeast or ¼ cup freshly grated parmesan
  • 1 tablespoon tomato puree
  • 2 teaspoon dried Italian herbs
  • ½ teaspoon salt
  • ⅓ teaspoon black pepper
  • ⅓ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 2 tablespoon coconut flour (15g), or use 4 tablespoon almond flour (25g)

Instructions

  1. Peel the turnips, then grate them in a food processor or with a box grater. You should have 3 cups shredded turnip.
  2. Place the shredded turnip in a bowl. Cover and microwave for 5 minutes. Allow to cool a little, then transfer to a muslin cloth or kitchen towel. Squeeze out all the water.
  3. Whisk the eggs with a fork.
  4. Add the shredded turnip (water removed) to a bowl with the salt, pepper, chicken, eggs, olive oil, onion and garlic powder, nutritional yeast or parmesan, tomato puree, Italian herbs and coconut flour. Mix to combine and allow to stand for 5 minutes.
  5. Shape into 6 fritters.
  6. Heat a generous drizzle of oil in a large frying pan. Add 3 fritters and cook for about 3 minutes per side on a medium heat or until golden and cooked through. Repeat for remaining fritters.

Notes

  • 3g net carbs per fritter. 2-3 fritters per serving. (3 for a larger meal).
  • Serve with chopped chives and a dollop of Greek yogurt or easy guacamole, keto mayonnaise or keto Caesar dressing. As a side, I recommend a crunchy green salad, steamed broccoli or green beans.

  • TOP TIP: Squeeze out as much liquid as possible from the cooked turnips. This makes the fritters robust.
  • Store leftovers in the fridge for up to 3 days. Freeze for up to 3 months.
