Chicken Gnocchi Soup

Ingredients

  • 1 pound chicken breast cooked and shredded, boneless skinless
  • 4 Tablespoons butter
  • ½ cup carrot shredded
  • 1 celery diced, stalk
  • 1 onion chopped, small
  • 2 garlic minced, cloves
  • ¼ cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups half and half
  • salt for seasonings
  • black pepper for seasonings
  • 16 ounces potato gnocchi 1 package, mini size
  • 1 cup spinach chopped, fresh

Instructions

  1. In a large dutch oven or stock pot, melt butter on medium heat.
  2. Add the onions, celery, carrots and garlic to the Dutch oven. Cook until onions become translucent, about 2-3 minutes.
  3. Whisk in flour and let cook for a minute then slowly add the chicken broth and simmer until the mixture starts to thicken.
  4. Meanwhile prepare gnocchi according to package directions, drain and set aside.
  5. Pour the half and half into the dutch oven with the vegetable and chicken broth mixture. Bring to a boil, season with salt and pepper.
  6. Reduce heat and add gnocchi, spinach and chicken, simmer until heated through and mixture has thickened about 5-10 minutes.

Notes

  • FRIDGE: Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • FREEZER: Leftover chicken and gnocchi can be store in the freezer in an airtight container for up to 3 months. However, it’s important to note that potato gnocchi will change texture after stored in the freezer. It will still taste great, the gnocchi just may have an odd texture!
