Chicken Orzo Soup Recipe

Ingredients

  • 4 teaspoons olive oil divided
  • 1 pound boneless skinless chicken breasts, cut into ¾ –inch pieces
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground pepper
  • ½ yellow onion chopped
  • 3 carrots cut into half-circles
  • 3 cloves garlic minced
  • 1 teaspoon ground oregano
  • ¼ teaspoon red pepper flakes (adjust to taste)
  • 1 (28 ounce) can crushed tomatoes
  • 5 cups chicken broth
  • 1 cup orzo pasta
  • 3 tablespoons minced flat-leaf parsley
  • 4 basil leaves thinly sliced
  • grated Parmesan cheese for serving if desired

Instructions

  1. Heat 2 teaspoons olive oil in a large saucepan set over medium-high heat. Add the chicken, salt and pepper, and sauté until just cooked through. Transfer the chicken to a bowl, cover with foil and keep warm.
  2. Turn the heat to medium and heat the remaining 2 teaspoons of oil in the saucepan. Add the onions and carrots, and cook until the vegetables are starting to soften, about 5 minutes. Add the garlic, oregano and red pepper flakes, and cook for 1 minute.
  3. Stir in the crushed tomatoes and chicken broth. Bring to a boil, then reduce heat and cook at a lively simmer for 20 minutes, stirring occasionally.
  4. Add the orzo and cook until tender, about 10 minutes. Throughout cooking, scrape the bottom of the saucepan with a wooden spoon to stop the orzo from sticking. Be careful not to splash the hot liquid on yourself!
  5. Stir in the cooked chicken, parsley and basil. Serve with grated Parmesan cheese, if desired.
