Chicken Primavera

Chicken Primavera is a light and savory dish loaded with vibrant vegetables and flavored with fresh garlic and basil. A perfect summer supper!

Ingredients

  • 3 chicken breasts
  • our balsamic marinade
  • 2 teaspoons fresh minced garlic
  • 1 teaspoons olive oil
  • 3 medium tomatoes diced, or sliced cherry tomatoes
  • 1 crookneck yellow squash diced
  • 1/2 cup chicken broth
  • 1 teaspoon chicken bullion
  • salt and pepper
  • 2 Tablespoons heavy cream optional
  • 1/4 cup fresh chopped basil
  • 1 cup parmesan fresh grated, divided
  • 1 pound pasta

Instructions

  1. About 2 to 3 hours before serving, place chicken in marinade in the fridge.
  2. 30 minutes before serving: In a large skillet, over medium heat, sauté the minced garlic in oil. Add the diced tomatoes, squash, chicken broth, chicken bullion, and salt and pepper. If using, stir in heavy cream and a little parmesan cheese once the chicken broth is bubbling. While that is cooking, boil pasta according to package directions.
  3. Grill chicken over medium heat. When fully cooked, slice into long strips.
  4. When the squash is fully cooked, remove the fry pan from heat and toss in the fresh basil. Layer each bowl with noodles, a scoop of the primavera sauce, sliced grilled chicken, and top with the parmesan cheese.
