Chicken Queso Soup
Chicken Queso Soup features a rich blend of pepper jack and cheddar cheeses melted with cream cheese, chicken broth, and cooked chicken, creating a creamy and cheesy base with a mild spicy kick from green chiles and chili powder. Ingredients
- 2 Tablespoons butter salted
- 1 medium onion (finely diced)
- 1 carrot (finely diced)
- 2 cloves garlic (finely diced)
- 3 to 4 cups chicken broth
- 2 cups pepper jack cheese (shredded)
- 2 cups cheddar cheese (shredded)
- 8 ounce pkg cream cheese (softened)
- 4 ounces green chiles (diced)
- 2 to 3 cups chicken cooked, shredded
- 1/2 Tablespoon chili powder
- 1 teaspoon black pepper
Optional Toppings:
- cilantro fresh cilantro, grated cheese
- cheese

Instructions
- Heat a large pot over medium heat. Add butter, diced onion, and diced carrot. Cook for 10 minutes, stirring often until softened. Add in garlic and cook for only 1 minute longer.
- Add chicken broth. Cut cream cheese into cubes and add 1 at a time. Stir in cheese 1/2 cup at a time, stirring well after each addition. This allows the cheese to melt and not clump together. Let the cheese fully melt.
- Stir in green chiles, cooked chicken, chili powder, and pepper. Allow to cook for 5 minutes. Check for seasonings and add salt and pepper as needed.
- If you desire a thinner soup, add more chicken broth. If you want a thicker, creamier soup, add 1/2 cup of heavy cream.
- Serve topped with fresh cilantro and grated cheese.
Notes
- Using rotisserie chicken speeds up preparation and adds flavor to the soup.
- When cooking chicken breast separately, season it generously with salt to avoid blandness in the soup.
