Chicken Ramen Stir-Fry

Ingredients

  • 2 3 oz packages Ramen Noodles
  • 3 Tbsp vegetable oil
  • 2 skinless boneless chicken breasts sliced into bite sized strips
  • 1 c. broccoli florets
  • 1 14 oz package coleslaw mix
  • 2 cloves garlic minced
  • 1 Tbsp peeled and shredded fresh ginger
  • 1/3 c. chicken broth
  • 1/3 c. reduced sodium soy sauce
  • 1 tsp cornstarch
  • 1 Tbsp sesame oil
  • 1 tsp Truvía® Brown Sugar Blend
  • 1 Tbsp sesame seeds optional

Instructions

  1. Bring medium size pan of water to boil. Add Ramen noodles and cook them according to package directions. Drain and stir in 1 Tbsp of vegetable oil. Set aside.
  2. In a large skillet heat 2 Tbsp vegetable oil over high heat. Add chicken and cook until chicken is cooked through and no longer pink, about 5-7 minutes. Remove from skillet and set aside.
  3. Add broccoli, coleslaw mix, and garlic and saute for 3-5 minutes. Add ginger and fry for another two minutes.
  4. Meanwhile in a mixing bowl combine chicken broth, soy sauce, cornstarch, sesame oil, and Truvía® Brown Sugar Blend and mix until blended.
  5. Add chicken, Ramen noodles, broth mixture into skillet and cook until heated through.
  6. Garnish with sesame seeds if desired.
