Ingredients

  • 4 cups chicken chopped or shredded, cooked
  • 1 cup celery chopped
  • 1/2 cup red onion diced
  • 1/2 cup pecans chopped or slivered almonds
  • 1/2 cup mayonnaise
  • 1/2 cup yogurt plain, Greek
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 3 tablespoons parsley chopped, fresh
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large bowl, combine chicken, celery, red onion, nuts, mayonnaise, Greek yogurt, lemon juice, Dijon mustard, parsley, salt, and pepper. Taste and season with additional salt and pepper, if necessary.
  2. Serve on a croissant, bread, over greens, in a wrap, in a lettuce cup, or eat with crackers.

Notes

  • Store the chicken salad in an airtight container in the fridge for up to 4 days to maintain freshness.
