Chicken Salad with Cranberries and Walnuts

Homemade Cranberry Walnut Chicken Salad is great for sandwiches or served on top of lettuce.

Ingredients

  • 1 pound chicken tenders or 1 pound leftover cooked chicken -
  • 3 ribs celery sliced
  • 1 cup chopped walnuts
  • 1/2 cup dried cranberries
  • 1/2 cup mayonnaise
  • 1 teaspoon chicken bouillon powder
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon salt

Instructions

  1. If using raw chicken: Place chicken in a pot and cover with water or broth. Bring to a simmer over medium heat and cook for about 30 minutes until fully cooked. Cool slightly, then shred the chicken and transfer to a large bowl. Make sure the chicken is at room temperature or chilled before mixing the salad together.
  2. Combine the shredded chicken, celery, nuts, dried fruit, and mayonnaise in a medium bowl. Mix well.
  3. Season with bouillon powder, salt, and pepper. Taste and adjust seasonings as needed.
