Ingredients
- 12 ounces cooked, shredded or diced chicken breast (about 3 cups)
- ½ cup sliced celery
- ½ cup red grapes, halved
- 3 tablespoons sliced almonds, toasted
- 2 scallions, sliced
- 3 tablespoons Avocado Oil Mayonnaise
- 3 tablespoons plain 2% Greek yogurt
- 2 teaspoons fresh lemon juice
- 1 teaspoon Dijon mustard
- ¾ teaspoon za’atar or other herbs/spices (optional) *see notes
- salt and pepper
Instructions
- Place the chicken, celery, grapes, almonds, and scallions in a large bowl.
- Mix the mayonnaise, yogurt, lemon juice, mustard, and za’atar (or other herbs/spices) together in a separate bowl.
- Pour the dressing over the other ingredients and stir to combine. Season with salt and pepper to taste.
