Chicken Salad with Grapes and Almonds

Ingredients

  • 12 ounces cooked, shredded or diced chicken breast (about 3 cups)
  • ½ cup sliced celery
  • ½ cup red grapes, halved
  • 3 tablespoons sliced almonds, toasted
  • 2 scallions, sliced
  • 3 tablespoons Avocado Oil Mayonnaise
  • 3 tablespoons plain 2% Greek yogurt
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • ¾ teaspoon za’atar or other herbs/spices (optional) *see notes
  • salt and pepper

Instructions

  1. Place the chicken, celery, grapes, almonds, and scallions in a large bowl.
  2. Mix the mayonnaise, yogurt, lemon juice, mustard, and za’atar (or other herbs/spices) together in a separate bowl.
  3. Pour the dressing over the other ingredients and stir to combine. Season with salt and pepper to taste.
