Chicken Salad with Grapes and Pecans

This chicken salad recipe with grapes is the perfect amount of sweet and crunch! We love it on a croissant for lunch.

Ingredients

  • 2 cups cooked shredded chicken
  • ½ - 2/3 cup mayonnaise
  • ½ cup chopped celery
  • ½ cup grapes halved
  • 1/3 cup pecans chopped
  • ¼ cup red onion diced
  • 2 tablespoons chopped parsley
  • 1 teaspoon salt
  • ½ teaspoon cracked pepper
  • 4 croissants

Instructions

  1. Add the chicken, 1/2 cup of mayonnaise, celery, grapes, pecans, onion, parsley, salt, and pepper to a mixing bowl and stir well to combine.
  2. Add additional mayonnaise if you'd like a wetter consistency. 
  3. Store covered in the fridge for 1 hour to allow the flavors to meld before serving.
  4. Divide evenly between 4 croissants.

Notes

  • Store leftovers in the fridge, tightly covered, for up to 3 days. 
  • Swap in Greek yogurt for the mayonnaise as desired.
