Ingredients
- 3 tbsp toasted sesame oil divided
- 1 large onion diced
- 4-5 garlic cloves minced
- 1 lb chicken sausages sliced
- 2 medium zucchinis sliced
- 1 cup cherry tomatoes halved
- ¼ cup soy sauce
- 1-2 tbsp brown sugar *2 tbsp for a more sweeter sauce
- cooked rice for serving
- green onion diced, optional for garnish
Instructions
- Heat toasted 1 tablespoon sesame oil in a large wok or skillet over medium-high heat. Add in onion, garlic and chicken sausage; cook until onions are translucent and chicken sausage is slightly browned, about 4-5 minutes.
- Add the cherry tomatoes and zucchini slices to the skillet. Stir-fry 3-4 minutes until the vegetables are slightly tender.
- Add in the soy sauce, brown sugar, and remaining sesame oil. Toss to combine. Season with salt and pepper to taste.
- Stir in the cooked rice and serve immediately. Garnish with diced green onion, if desired.
