Chicken Scarpariello

Ingredients
- 2 chicken breast
- 2 chicken thighs
- 3 cloves garlic
- 1 rosemary stem
- 5 oz white wine
- 2 oz lemon juice
- 2 oz butter
- salt
- black pepper
- 1 tbsp Italian parsley for garnish
- ¼ cup chicken stock
- neutral cooking oil generic cooking oil
- 1/2 cup flour
Instructions
- Cut your pieces of chicken into bite-size pieces, making sure they are the same size to avoid undercooked/overcooked pieces.
- Heat the pan with 4oz (115 ml) of oil.
- Lightly toss to coat the chicken with the flour and place them on the heated pan making sure each side of the chicken is golden brown and crispy.
- Once they are golden brown, drain the leftover oil from the pan and keep the chicken in the pan.
- Next add the chopped cloves of garlic, and rosemary, as well as a pinch of salt & pepper. Sautée in the pan for an additional 2 minutes.
- Next add the white wine, lemon juice, butter, and chicken stock to the pan.
- Once the butter is melted place pan into the preheated oven at 350° degrees Fahrenheit (180° Celsius) for 4 minutes.
- After the oven, place the pan back.
