Chicken Shawarma Recipe

The best chicken shawarma made at home with a vibrant blend of spices, easily grilled and sliced, bursting with Middle Eastern flavors, a crowd pleaser! This is an easy version that you can make at home, without the need for a vertical spit.

Ingredients

  • 2 pounds skinless boneless chicken breast or thighs
FOR THE SHAWARMA MARINADE
  • 1 tablespoon garlic powder or use 3-4 grated garlic cloves
  • 1 tablespoon paprika
  • 1 tablespoon cumin ground
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cardamom
  • 1 teaspoon black pepper ground
  • 1 teaspoon cayenne pepper optional, for spicy – use to taste
  • ½ teaspoon cloves ground
  • ½ teaspoon ground cinnamon
  • salt to taste
  • ¼ cup olive oil plus more for grilling
FOR SERVING
  • pita warmed pita, chopped cucumber, chopped tomato, green lettuce, sliced red onion, tzatziki or yogurt sauce

EASY YOGURT SAUCE
  • 1 cup Greek yogurt
  • 2 cloves garlic minced
  • 1 tablespoon dill fresh, chopped
  • 1 tablespoon lemon juice
  • salt to taste
  • black pepper to taste

Instructions

  1. Mix together all of the marinade ingredients in a small bowl, then add it to a large sealable baggie or a large bowl. Add the chicken and massage the marinade into the meat. Cover, refrigerate, and marinate at least 2 hours, or overnight for more flavor penetration.
  2. Heat your grill (or grill pan indoors) to medium-high heat and lightly oil the grates.
  3. Grill the chicken (discard the marinade) 5 minutes, then flip and grill another 3-4 minutes, or until cooked through. The internal temperature of the chicken should measure 165 degrees F (74C).
  4. Rest the chicken on a cutting board for 5 minutes, then slice and serve with pitas, sauces, and toppings.
EASY YOGURT SAUCE
  1. Mix all of the ingredients together in a small bowl. Use as desired.
