Chicken Shish Kabobs

Chicken Shish Kabobs are made with marinated chicken thigh or breast pieces seasoned with a combination of Gaby’s Go To Seasoning, olive oil, red wine vinegar, garlic, lemon juice, salt, and pepper. Ingredients

For the chicken:
  • 3 tablespoons Gaby’s Go To Seasoning
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon kosher salt coarse
  • 1 teaspoon black pepper freshly ground
  • 6 garlic roughly chopped, cloves
  • 1 lemon juiced
  • 1 lemon cut into wedges/sliced for serving
  • 3 pounds chicken thigh cut into 1 ¼-inch cubes, or chicken breast, boneless skinless
  • 1 recipe basil vinaigrette

Instructions

  1. Combine the seasoning, olive oil red wine vinegar, salt, pepper, garlic and lemon juice in a bowl; whisk to combine. Add in the chicken. Cover and chill at least 1 hour.
  2. Prepare grill over medium-high heat. Thread chicken pieces on skewers, dividing equally. Discard marinade in bowl. Sprinkle each skewer with additional gaby’s go-to seasoning.
  3. Grill chicken until golden brown and cooked through, turning skewers occasionally, 10 to 12 minutes total. Transfer skewers to platter. Serve with basil vinaigrette and extra lemon wedges

Notes

  • Use only chicken thighs or only chicken breasts to ensure even cooking times across skewers.
  • Marinate the chicken for at least one hour to develop flavor and tenderness.
  • Discard the leftover marinade before grilling to prevent flare-ups.
  • Turn skewers regularly on the grill for evenly cooked and browned kabobs.
