Chicken Shish Kabobs
Chicken Shish Kabobs are made with marinated chicken thigh or breast pieces seasoned with a combination of Gaby’s Go To Seasoning, olive oil, red wine vinegar, garlic, lemon juice, salt, and pepper. The marinade helps tenderize the chicken and infuse it with bright, savory flavors. Grilling the skewers over medium-high heat results in juicy, lightly charred pieces that pair well with basil vinaigrette and fresh lemon wedges for added brightness.
Ingredients
For the chicken:
- 3 tablespoons Gaby’s Go To Seasoning
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon kosher salt coarse
- 1 teaspoon black pepper freshly ground
- 6 garlic roughly chopped, cloves
- 1 lemon juiced
- 1 lemon cut into wedges/sliced for serving
- 3 pounds chicken thigh cut into 1 ¼-inch cubes, or chicken breast, boneless skinless
- 1 recipe basil vinaigrette
Instructions
- Combine the seasoning, olive oil red wine vinegar, salt, pepper, garlic and lemon juice in a bowl; whisk to combine. Add in the chicken. Cover and chill at least 1 hour.
- Prepare grill over medium-high heat. Thread chicken pieces on skewers, dividing equally. Discard marinade in bowl. Sprinkle each skewer with additional gaby’s go-to seasoning.
- Grill chicken until golden brown and cooked through, turning skewers occasionally, 10 to 12 minutes total. Transfer skewers to platter. Serve with basil vinaigrette and extra lemon wedges
Notes
- Use only chicken thighs or only chicken breasts to ensure even cooking times across skewers.
- Marinate the chicken for at least one hour to develop flavor and tenderness.
- Discard the leftover marinade before grilling to prevent flare-ups.
- Turn skewers regularly on the grill for evenly cooked and browned kabobs.
